Honey Coconut Cashew flapjacks

This recipe is all about golden, gooey, cashew-loaded goodness. Get ready to whip up the most irresistible, drool-worthy flapjacks that’ll keep you coming back for more.
Ingredients:
- 140g butter
- 140g light brown sugar
- 2 tablespoons set honey
- 140g porridge oats
- 140g Honey coconut cashews, crushed
- You can use any flavour cashews, but these are my favourite for this recipe
- 1 tablespoon plain flour
Instructions:
- Preheat the Oven: Heat the oven to 160°C (140°C fan) or gas mark 3.
- Prepare the Tin: Grease and line a cake tin with baking parchment.
- Melt the Butter Mixture: In a large non-stick pan, melt the butter over low heat. Add the light brown sugar and honey, stirring with a wooden spoon for 5-10 minutes until the sugar dissolves.
- Chop the Cashews: While waiting for the sugar to dissolve, crush the cashews with a knife (don’t attempt to chop them, they will fly everywhere)
- Combine Ingredients: Remove the pan from the heat and stir in the porridge oats, chopped cashews, and flour until everything is well-coated.
- Transfer to Tin: Pour the mixture into the prepared tin and press it down firmly into an even layer.
- Bake: Bake in the preheated oven for 30-35 minutes until golden.
- Cool and Cut: Allow the flapjack to cool for 5 minutes, then cut them into squares. Leave them in the tin until they are fully cooled to ensure they hold together.
